At the time of writing this, my easy white bean soup recipe is saving my tush! We are in the midst of social isolation due to the recent global pandemic. Grocery stores have been bought out, especially of dry goods and toilet paper. Our local grocery store imposed buying limits on meat and other perishables, to ensure that everyone has access to fresh food. So, I’ve had to get tricky with keeping up our intake of healthy food! I’m also super busy because all three of my kids are home full-time, while my husband and I continue to work full-time from home. This easy white bean soup was delicious and basically cooks itself. I used my instant pot, but you can also cook this easy white bean soup on the stovetop! Check out the recipe – I think you’ll love it!
Easy White Bean Soup
This soup is great because you need very few ingredients. Just white lima beans, vegetable oil, crushed garlic, salt and some bouillon. You’ll also need a good soup pot and a blender or immersion hand blender. I served this with a piece of toasted whole grain bread. My kids loved dipping the crisp bread into the soup, and eating the soft bites with their little fingers. It also froze really well, so we had leftovers later in the week. Check out the recipe below. Easy White Bean Soup Recipe
Ingredients
- 1 package Great White Lima Beans
- 2 Tbs Vegetable Oil
- 2 Cloves Garlic Crushed
- 1 Tbs Iodized Salt or Salt of Choice
- 1 small Sprig Rosemary
- 2 packs No Sodium Chicken Bouillon
- 8.5 cups Water⠀
Instructions
- Add all ingredients to a pot and simmer until the beans are soft. For instant pot, set to pressure cook on normal heat for 20 minutes and then vent immediately and open the lid.⠀Transfer the mixture to a heat-safe blender and blend until smooth. Alternatively, use an immersion blender.
Serving tips
This soup is great because, while it’s flavorful and enjoyable, the flavor isn’t super strong. So, you can add lots of ingredients or toppings to make it work for you. Some options include:
- Truffle Oil
- A pinch of bacon
- Your favorite cheese
- Sautéed onions and mushrooms
- Wilted or sautéed spinach
- Steamed broccoli
- Roasted garlic
